The E.A. Deaf Process is a decaffeination method that involves soaking coffee beans in water to remove caffeine and other soluble compounds, followed by combining the water-caffeine mixture with ethyl acetate to dissolve the caffeine. Once the caffeine is separated from the coffee solution, the ethyl acetate is evaporated, leaving decaffeinated coffee beans. This method is regarded as a safer alternative to other decaffeination methods and is commonly used in "natural" decaffeination processes due to the presence of ethyl acetate in various fruits such as bananas and apples.
